Red Velvet Brownies (High protein)

Anyone else slightly obsessed with chocolate? Brownies? Anything Sweet? Basically I have a sweet tooth and I am not ashamed about it! I love creating healthier sweet treats to keep in the fridge and freezer so that I know I can easily grab something to cure that sweet tooth but not completely eat junk all of the time! Don’t get me wrong I love my full fat candy bars and desserts but sometimes it’s nice to have a lighter snack on hand!

So insert RED VELVET BROWNIES! They are high in protein, low sugar, gluten free, grain free, keto friendly and SUPER SUPER FUDGEY!

Here’s what you’ll need:

100 g of beets / pumpkin/ 1 banana ( I used beets here but any of the options work!)
1 egg
1 cup Greek yogurt
60 g of chocolate protein powder
2 tbsp cacao powder
1/4 cup sugar I used Lakanto monkfruit sugar to keep it low in sugar
1 tsp baking powder
1/4 cup almond milk
1/4 cup @lilys_sweets chocolate chips!

Directions:

  1. Blend yogurt, beets/banana/ pumpkin, and egg together.
  2. In separate bowl combine dry ingredients.
  3. Add purée mixture to the dry ingredients.
  4. Stir and then add almond milk. And then add the chocolate chips!
  5. Bake 350 for 20 minutes in muffin tins! I used silicone molds and only filled them about 1/3-1/2 full!
  6. Once baked I frosted them with some @delightedbydesserts red velvet hummus! Or you can make your own or eat them by themselves!

They didn’t last long in my house! And I may or may not have shared them with my family because I am a chocolate holic!
