Cashew Coconut Cookies

I’m excited to say that this is my first recipe that I will be posting on my blog and I’m so excited to share it with all of you! I have put in a lot of work and continue to learn more about the blogging process as I write this, so bare with me as I continue to improve my website but I figured that posting a recipe first would be a great first post!

So with that being said I am sharing these delicious coconut cashew cookies with all of you today! I was experimenting in the kitchen a few days ago before Christmas with some leftover ingredients I wanted to use up, and what those random ingredients turned into was a crunchy cookie on the outside but soft and gooey on the inside! They are a cookie lovers dream, especially if you love cashews, coconut, or just cookies in general!

These cookies are grain free, gluten free, and full of all the healthy fats that will keep you satisfied when those sugar cravings hit!

Cookie Recipe…

What you will need:

  • 1/2 Cup of Coconut Flour
  • 1/4 Cup of Almond Flour
  • 3 Scoops of Collagen
  • 1 tsp of Baking Powder
  • 1/4 Cup of Coconut oil
  • 1 Egg
  • 2 Tbsp of Honey or Maple Syrup
  • 1 tsp of Vanilla
  • 1/4 Cup of Karma Coconut Cashews ( or any type of cashew!)
  • 2 Tbsp of Shredded Coconut

Directions:

Set the oven to 325 F and combine all the dry ingredients ( flour, collagen, baking powder) in a bowl. In another bowl combine the egg, oil ( melted), vanilla, and honey together and mix.
Then chop the cashews into small pieces ( I used a food processor). 
Add the flour mixture slowly into the wet mixture stirring until all mixed, then add in the coconut and cashews! 
Use a cookie scoop and place onto the cookie sheet. With a fork press down into them until they are about 1/4 of an inch ( they don’t spread)
Place in the oven for 6 minutes making sure to let them cool a bit on the cookie sheet so they can set up without falling apart!

The last thing to do now is take a bite and savor the warm gooey cashew cookie itself! This should make about 16-20 cookies depending on the size you make them!
